Roasted Sweet Potato Salad

Easy-to-make and healthy salad for lunch or dinner

Ingredients
  

  • 2 medium-sized sweet potatoes
  • 1/4 cup olive oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon paprika
  • 1/4 teaspoon cinnamon
  • 1/2 cup chopped red onion
  • 1 cup sundried tomatoes, sliced
  • 1/2 cup chopped red pepper
  • 1/4 cup chopped fresh parsley
  • 1/4 cup crumbled feta cheese
  • 2 tablespoons lemon juice
  • 1 tablespoon honey
  • 2 tablespoons Dijon mustard

Instructions
 

  • Preheat your oven to 400°F.
  • Peel and dice the sweet potatoes into small bite-sized pieces.
  • In a mixing bowl, combine the sweet potatoes, olive oil, salt, black pepper, garlic powder, cinnamon and paprika. Mix until the sweet potatoes are coated in the spices.
  • Spread the sweet potatoes in a single layer on a baking sheet and roast for 20-25 minutes or until they are golden brown and tender.
  • Dice a red onion and saute the onion until translucent and sweet to taste.
  • While the sweet potatoes are roasting, prepare the dressing by whisking together the lemon juice, honey, and Dijon mustard in a small bowl.
  • Once the sweet potatoes are done, remove them from the oven and let them cool for a few minutes.
  • In a large mixing bowl, combine the roasted sweet potatoes, sauteed red onion, chopped roasted red peppers, fresh parsley, crumbled-up feta cheese and the dressing.
  • Enjoy at room temperature or cool.
