Easy Ground Chicken Parmesan

This easy ground chicken parmesan recipe is a quick meal made with simple ingredients. Made with ground chicken, seasonings, lemon zest, panko and parmesean. Use your favourite marinara sauce and the finish with a parmesan & mozzarella blend broiled on top.

Ingredients
  

  • 2 packs of ground chicken
  • Zest of 1 lemon and a squeeze of half
  • 1 tbsp. Italian seasoning
  • 1 tbsp. garlic powder
  • 1 tbsp. onion powder
  • 1/2 cup chopped fresh parsley
  • 1 egg
  • Mix: 1/2 cup parmesan cheese and 2 tbsp. milk
  • Salt & Pepper
  • 1/2 cup Panko or breadcrumbs
  • Olive oil or vegetable oil
  • Topping Mix: 1/2 cup parmesan cheese with 1/2 cup mozzarella cheese

Instructions
 

  • Preheat oven to 375°
  • In a large bowl mix the ground chicken, lemon zest, lemon juice, Italian seasoning, garlic powder, onion powder, chopped parsley, panko, and parm/milk blend, salt and pepper.
  • Shape the chicken into the size of a small chicken breast; oval shaped and not too thick.
  • Add the oil to a large skillet over medium-high heat covering the entire surface with oil. Once the oil is heated, brown the ground chicken patties on each side for approximately 4 minutes each side. Place them on a paper towel to rid of the grease.
  • In a 9x13 baking dish add a layer of sauce to the bottom of the pan. Place the chicken patties over top of the sauce. Spoon a tablespoon of sauce over each of the patties and place in the oven for 15-20 minutes. This is to finish cooking the inside of the meat (no pink). Remove the baking dish and then place the oven on broil. Add the mix of parmesan and mozzarella to the top of the chicken and then broil for 3-5 minutes or until you are satisfied with the top. Serve with pasta or mashed potatoes.
